Kangaroo Medallions with Quick Mustard Sauce

Kangaroo Medallions with Quick Mustard Sauce (serves 3-4)

Ingredients:
  • 1 Kangaroo Loin
  • 1 tbsp. light or regular olive oil
Sauce:
  • 3/4 cup cream 2 tbls.
  • chopped green shallots
  • 2 tbls. whole grain mustard salt to taste
Prepare the sauce first: Place cream, shallots and mustard in a pan, bring to a boil and simmer 1 minute. Season with salt to taste. Rub Kangaroo Loin lightly with oil. Season with salt & pepper. Heat small amount of oil in a fry pan and sear loin over medium high heat for about 2 minutes, turning to sear all sides: let cook until the loin is brought to medium rare . (don’t overcook! Kangaroo loin has virtually no fat so should be served medium rare for best results) Transfer loin to a warm plate, cover and allow to stand for another 2 minutes. Slice medallions and serve with hot sauce, baby potatoes and snow peas or beans.
