The infused steam is then sent through a cooling coil and transformed into a liquid known as hydrosol, above which floats a layer of essential oil. Essential oil is insoluble in water, and the two liquids do not mix. The essential oil is then separated from the precious floral water and retrieved in a condensing recipient.
